Tomato & Sausage Rice Bake

  • 6 Sausages
  • 1 Onion Diced
  • 1 Capsicum Sliced
  • 1 1/2 c Rice Uncooked
  • 1 c Beef Stock
  • 1 tsp Taco Spice Mix
  • 1 tin of Tomatoes
  • 2 tbsp Tomato Paste
  • 2 c Frozen Mixed Veges


  • Brown the sausages, onion and capsicum in a large frying pan for 6-8 mins. Remove the sausages and slice them into chunks
  • Add the sausages, onion, capsicum, uncooked rice, beef stock, taco spice mix, tinned tomatoes, tomato paste and frozen mixed veges
  • Add 2c of boiling water and stir to mix through
  • Bake in the oven for 35-40 mins at 180°C until the rice is fully cooked and the water has been absorbed. Check occasionally throughout cooking and add extra boiling water if the rice is absorbing it too quickly
