Malaysian Style Chicken Soup

Ingredients

  • 6 Chicken Drumsticks
  • 1 Onion Finely Diced
  • 2 Garlic Cloves Crushed
  • 1 tsp Fresh Ginger Grated
  • 1 tbsp Butter
  • 4 Celery Sticks Finely Diced
  • 3 Carrots Finely Diced
  • 1 Tin of Tomatoes
  • 2 c Chicken Stock
  • 1 c Water
  • 2 tbsp Sweet Chilli Sauce
  • Salt/Pepper
  • 200 ml Coconut Cream
  • 2 Packets of 2 min Noodles
  • 2 tbsp Fresh Parsley

Instructions

  • Add the chicken drumsticks, onion, butter, garlic, ginger, celery, carrots, tinned tomatoes, chicken stock, sweet chilli sauce and water to a large soup pot. Season with salt and pepper and bring to the boil and let simmer for 30 – 40 mins
  • Remove the chicken drumsticks from the pot and remove the meat off the bones, add the chicken meat back to the soup pot
  • Bring the soup back to the boil and add the packets of 2 min noodles and cook
  • Add the coconut cream and stir to heat through
  • Serve topped with fresh parsley
