Dice the chicken into small cubes. Slice the onion. Add to a large casserole dish
Peel and dice the kumara, add to the casserole dish
Add the frozen mixed vegetables to the casserole dish
Add the chicken soup mix and cream to a small bowl, whisk with a fork to combine. Add to the casserole dish and stir to coat the chicken and vegetables
Cover the casserole dish with a lid or tinfoil. Bake in the oven for 45 minutes. Remove the lid for the last 10 minutes of cook time to brown the chicken up and simmer the juices down
