Add the mince, diced onion and crushed garlic clove to a large frying pan. Season with salt and pepper, brown for 6-8 minutes
Peel and grate the carrots, add to the frying pan
Add the tinned tomatoes and beef stock powder to the frying pan with a small amount of water. Simmer uncovered for 12-15 minutes (add more water if needed)
Cut the courgettes into 'zoodles', cook in a saucepan of boiling water for 6-8 minutes, drain once cooked
