Instructions
Preheat the oven to 180°C
Finely dice the onion and bacon. Brown in a frying pan for 6-8 minutes
Sift the flour and baking powder into a large mixing bowl
Add the egg, milk and melted butter to the flour and whisk together
Grate the cheese and add to the mixing bowl with the creamed corn and cooked bacon and onion. Mix to combine
Grease a muffin tray with butter or oil, spoon the mixture into the muffin holes and bake for 20 - 25 minutes
Remove from the oven and allow to settle for 1-2 minutes before removing the muffins from the tray. Cool on a wire rack
Store in an air tight container in the fridge
