Ingredients
- 1 kg Chicken Drumsticks
- 1 Egg
- 2 tbsp Milk
- 1/2 c Breadcrumbs
- 1 tsp Chicken Stock Powder
- 1 tsp Dried Mixed Herbs
- 1 tsp Paprika
- 1 tsp Curry Powder
- Salt/Pepper
- 2 Potatoes
- 3 Carrots
- 1/3 Pumpkin
- 1 tbsp Oil
- 1 Broccoli
Instructions
- Whisk the egg and milk together in a large bowl, season with salt and pepper
- Add the chicken coating to a separate large bowl; Breadcrumbs, chicken stock powder, mixed herbs, paprika and curry powder. Dip the chicken drumsticks into the milk mixture and then into the chicken coating; Place on a large oven tray and cook in the oven for 40-45 mins at 180°C, turn occasionally
- Peel and dice the potatoes, carrots and pumpkin into large chunks. Toss in the oil and season with salt and pepper. Place on a large oven tray and roast in the oven for 35-40 mins at 180°C, turn occasionally
- Steam the broccoli in a small amount of water in a saucepan for 8-10 mins
- Serve
