Ingredients

  • 1 kg Chicken Drumsticks
  • 1 Egg
  • 2 tbsp Milk
  • 1/2 c Breadcrumbs
  • 1 tsp Chicken Stock Powder
  • 1 tsp Dried Mixed Herbs
  • 1 tsp Paprika
  • 1 tsp Curry Powder
  • Salt/Pepper
  • 2 Potatoes
  • 3 Carrots
  • 1/3 Pumpkin
  • 1 tbsp Oil
  • 1 Broccoli

Instructions

  • Preheat the oven to 180°C
  • Whisk the egg and milk together in a large bowl, season with salt and pepper
  • Add the chicken coating to a separate large bowl; Breadcrumbs, chicken stock powder, mixed herbs, paprika and curry powder
  • Dip the chicken drumsticks into the milk mixture and then into the chicken coating; Place on a large oven tray and cook in the oven for 40-45 mins at 180°C, turn occasionally
  • Peel and dice the potatoes, carrots and pumpkin into large chunks. Toss in the oil and season with salt and pepper. Place on a large oven tray and roast in the oven for 35-40 minutes, turn occasionally
  • Steam the broccoli in a small amount of water in a saucepan for 8-10 mins
  • Serve the chicken with Aioli (optional)
