Ingredients
- 1/4 Onion
- 2 Rashers of Bacon
- 2 c Flour
- 4 tsp Baking Powder
- 1 Egg
- 50 g Butter
- 1 c Milk
- 1 c Cheese
- 1/2 Tin of Creamed Corn
Instructions
- Preheat the oven to 180°C
- Finely dice the onion and bacon. Brown in a frying pan for 6-8 minutes
- Sift the flour and baking powder into a large mixing bowl
- Add the egg, milk and melted butter to the flour and whisk together
- Grate the cheese and add to the mixing bowl with the creamed corn and cooked bacon and onion. Mix to combine
- Grease a muffin tray with butter or oil, spoon the mixture into the muffin holes and bake for 20 – 25 minutes
- Remove from the oven and allow to settle for 1-2 minutes before removing the muffins from the tray. Cool on a wire rack
- Store in an air tight container in the fridge
