Cheese, Bacon & Corn Muffins

  • 1/4 Onion
  • 2 Rashers of Bacon
  • 2 c Flour
  • 4 tsp Baking Powder
  • 1 Egg
  • 50 g Butter
  • 1 c Milk
  • 1 c Cheese
  • 1/2 Tin of Creamed Corn


  • Preheat the oven to 180°C
  • Finely dice the onion and bacon. Brown in a frying pan for 6-8 minutes
  • Sift the flour and baking powder into a large mixing bowl
  • Add the egg, milk and melted butter to the flour and whisk together
  • Grate the cheese and add to the mixing bowl with the creamed corn and cooked bacon and onion. Mix to combine
  • Grease a muffin tray with butter or oil, spoon the mixture into the muffin holes and bake for 20 – 25 minutes
  • Remove from the oven and allow to settle for 1-2 minutes before removing the muffins from the tray. Cool on a wire rack
  • Store in an air tight container in the fridge
