  • 2 C Almond Meal
  • 1 1/2 C Sweetener
  • 1/2 C Cocoa Powder
  • 2 tsp Baking Powder
  • 2 tsp Baking Soda
  • 2 tsp Psyllium Husk
  • 1 Egg
  • 1 C Bestfoods Mayonnaise
  • 1 1/4 C Unsweetened Almond Milk
  • 1 tsp Vanilla Essence

Chocolate ganache

  • 150 g Sugar Free Chocolate
  • 30 g Butter
  • 1/4 c Cream


Cake Method

  • Preheat the oven to 160°C
  • Place all of the dry ingredients into a large bowl and combine
  • In a separate bowl add in all of the wet ingredients and whisk together
  • Add the wet ingredients into the dry and beat for 2 minutes until everything is combined
  • Pour the mixture into a lined 22cm cake tin and bake in the oven for 1 hour
  • Once cooked, allow to cool for 10mins before removing from the tin, then cool completely on a wire rack before icing with the chocolate ganache

Chocolate Ganache

  • In a saucepan, add the cream, butter and chocolate
  • Melt over a low heat until combined
  • Allow to cool in the fridge for 10 minutes before spreading on to the cake
  • Store the cake in an air tight container
