Ingredients
- 1 tsp Butter
- 250 g Streaky Bacon
- 1 Onion
- 2 Garlic Cloves
- 2 Leeks
- 4 Large Potatoes
- 6 tsp Vegetable Stock Powder
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Dried Parsley
- 3 tsp Cornflour
- 2 c Milk
Instructions
- Finely dice the bacon and add to a large soup pot with the butter, fry until crispy
- Finely slice the onion and leek, crush the garlic cloves. Add to the soup pot with the bacon and cook for 3-4 minutes
- Peel and finely dice the potatoes, add to the soup pot
- Add the vegetable stock powder, garlic powder, onion powder, dried parsley and cornflour to the soup pot with the milk and 4 cups of water. Stir and cover, bring to the boil, then turn down to a simmer and cook for 1 1/2 hours, stir occasionally
- Taste and season with salt and pepper
- Serve
