Ingredients

  • 1 tsp Butter
  • 250 g Streaky Bacon
  • 1 Onion
  • 2 Garlic Cloves
  • 2 Leeks
  • 4 Large Potatoes
  • 6 tsp Vegetable Stock Powder
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Dried Parsley
  • 3 tsp Cornflour
  • 2 c Milk

Instructions

  • Finely dice the bacon and add to a large soup pot with the butter, fry until crispy
  • Finely slice the onion and leek, crush the garlic cloves. Add to the soup pot with the bacon and cook for 3-4 minutes
  • Peel and finely dice the potatoes, add to the soup pot
  • Add the vegetable stock powder, garlic powder, onion powder, dried parsley and cornflour to the soup pot with the milk and 4 cups of water. Stir and cover, bring to the boil, then turn down to a simmer and cook for 1 1/2 hours, stir occasionally
  • Taste and season with salt and pepper
  • Serve
