Lemon & Garlic Chicken Drumsticks

  • 1 kg Chicken Drumsticks
  • 4 Garlic Cloves
  • 1 Lemon
  • Salt/Pepper
  • 1 Large Kumara
  • 4 Potatoes
  • 2 Carrots
  • 1 Broccoli
  • 1 tbsp Oil
  • 1/4 c Milk
  • 1 tbsp Butter


  • Preheat the oven to 180°C Fan Bake
  • Toss the chicken drumsticks in a drizzle of oil, rub the grated garlic cloves over the chicken and add to an oven proof dish
  • Squeeze the lemon juice over the chicken drumsticks. Slice the lemon and add to the oven dish. Bake uncovered in the oven for 40-45 minutes, turn often to stop the garlic from burning
  • Peel and dice the kumara and potatoes. Add to a large saucepan of water, boil until soft; 20-25 minutes. Drain the water once cooked and mash with the milk and butter
  • Peel and dice the carrots, dice the broccoli. Add a drizzle of oil to a large frying pan. Stir-fry the vegetables until soft; 10-12 minutes. Season with salt and pepper
  • Serve
