Creamy Bacon & Tomato Spaghetti (LC)

Ingredients

  • 1 tbsp Butter
  • 200 g Bacon
  • 1 Onion
  • 2 Garlic Cloves
  • 1 Carrots
  • 1 Courgette
  • 2 Tins of Plain Diced Tomatoes & Juice
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Dried Parsley
  • 1 tsp Paprika
  • 100 ml Cream
  • 300 g Dried Spaghetti Pasta
  • Salt/Pepper

Instructions

  • Bring a large saucepan of water to the boil (preparation to cook the pasta)
  • Dice the bacon and onion. Crush the garlic cloves
  • Add the butter to a large frying pan. Brown the bacon, onion and garlic for 6-8 minutes
  • Grate the carrot and courgette. Add to the frying pan with the tinned tomatoes, paprika, garlic powder, onion powder, dried parsley and cream. Stir, cover and simmer for 15-20 minutes; until the carrot and courgette simmer down and incorporate into the sauce. Add a small amount of water if the sauce is too thick
  • Cook the dried spaghetti pasta according to packet directions. Drain the water once cooked
  • Add the cooked spaghetti to the frying pan and toss in the bacon and tomato mixture. Taste and season with salt and pepper
  • Serve

Notes

Can add in 1/2tsp of dried chilli to give it a good kick
