Ingredients

  • 125 g Butter
  • 1 c Sugar
  • 2 tbsp Golden Syrup
  • 1 Egg
  • 1 c Flour
  • 1 tsp Baking Powder
  • 1 c Desiccated Coconut
  • 1 c Rolled Oats
  • 2 c Mixed Dried Fruit, Seeds, Nuts, Chocolate

Instructions

  • Preheat the oven to 180°C
  • Line a slice tray with non stick paper or grease with butter
  • Soften the butter and beat with the sugar until pale and creamy
  • Add the egg and golden syrup to the butter, beat to combine
  • Sift the flour and baking powder into a separate bowl
  • Mix the butter and flour mixture together until combined
  • Add the coconut and rolled oats to the mixture, stir to combine
  • Add the assorted nuts and dried fruit, mix gently to combine
  • Pour the mixture into the lined slice tray and press down with your hands or the back of a spoon
  • Bake in the oven for 30-35 minutes until golden brown
  • Remove from the oven and allow to completely cool before cutting in slices
  • Store in an airtight container
