Ingredients
- 125 g Butter
- 1 c Sugar
- 2 tbsp Golden Syrup
- 1 Egg
- 1 c Flour
- 1 tsp Baking Powder
- 1 c Desiccated Coconut
- 1 c Rolled Oats
- 2 c Mixed Dried Fruit, Seeds, Nuts, Chocolate
Instructions
- Preheat the oven to 180°C
- Line a slice tray with non stick paper or grease with butter
- Soften the butter and beat with the sugar until pale and creamy
- Add the egg and golden syrup to the butter, beat to combine
- Sift the flour and baking powder into a separate bowl
- Mix the butter and flour mixture together until combined
- Add the coconut and rolled oats to the mixture, stir to combine
- Add the assorted nuts and dried fruit, mix gently to combine
- Pour the mixture into the lined slice tray and press down with your hands or the back of a spoon
- Bake in the oven for 30-35 minutes until golden brown
- Remove from the oven and allow to completely cool before cutting in slices
- Store in an airtight container
