Ingredients
Cake
- 2 C Almond Meal
- 1 1/2 C Sweetener
- 1/2 C Cocoa Powder
- 2 tsp Baking Powder
- 2 tsp Baking Soda
- 2 tsp Psyllium Husk
- 1 Egg
- 1 C Bestfoods Mayonnaise
- 1 1/4 C Unsweetened Almond Milk
- 1 tsp Vanilla Essence
Chocolate ganache
- 150 g Sugar Free Chocolate
- 30 g Butter
- 1/4 c Cream
Instructions
Cake Method
- Preheat the oven to 160°C
- Place all of the dry ingredients into a large bowl and combine
- In a separate bowl add in all of the wet ingredients and whisk together
- Add the wet ingredients into the dry and beat for 2 minutes until everything is combined
- Pour the mixture into a lined 22cm cake tin and bake in the oven for 1 hour
- Once cooked, allow to cool for 10mins before removing from the tin, then cool completely on a wire rack before icing with the chocolate ganache
Chocolate Ganache
- In a saucepan, add the cream, butter and chocolate
- Melt over a low heat until combined
- Allow to cool in the fridge for 10 minutes before spreading on to the cake
- Store the cake in an air tight container
