Bacon Loaded Potatoes

Large Potatoes
250

Streaky Bacon

Cheese
Salt/Pepper

Sour Cream

Fresh Chives

Broccoli

Carrots

Brussell Sprouts

Instructions
Cook the potatoes whole in a large saucepan of water until just soft. Remove from the water and allow to cool long enough to be able to handle them.
Slice the potatoes but make sure you don't cut all the way through
Slice the bacon and place inside the cuts in the potatoes
Slice the cheese and place on top of the potatoes
Place the potatoes on a non stick baking tray and cook in the oven for 15-20 mins at 180°C - cook any left over bacon in the oven at the same time
Peel and slice the carrots, slice the broccoli and brussell sprouts
Add the oil to a large frying pan and then stir fry the vegetables for 10-12 minutes, season with salt and pepper
Serve the potatoes topped with a dollop of sour cream and chopped chives
