Bacon Loaded Potatoes

  • 4 Large Potatoes
  • 250 g Streaky Bacon
  • 1 c Cheese
  • Salt/Pepper
  • 125 g Sour Cream
  • 1 tbsp Fresh Chives
  • 1 Broccoli
  • 2 Carrots
  • 6 Brussell Sprouts
  • 1 tbsp Oil


  • Cook the potatoes whole in a large saucepan of water until just soft. Remove from the water and allow to cool long enough to be able to handle them.
  • Slice the potatoes but make sure you don't cut all the way through
  • Slice the bacon and place inside the cuts in the potatoes
  • Slice the cheese and place on top of the potatoes
  • Place the potatoes on a non stick baking tray and cook in the oven for 15-20 mins at 180°C – cook any left over bacon in the oven at the same time
  • Peel and slice the carrots, slice the broccoli and brussell sprouts
  • Add the oil to a large frying pan and then stir fry the vegetables for 10-12 minutes, season with salt and pepper
  • Serve the potatoes topped with a dollop of sour cream and chopped chives
