Ingredients
- 3 c Flour
- 6 tsp Baking Powder
- Salt
- 75 g Butter
- 1 c Milk
- 2 tbsp Butter
- 2 tbsp Strawberry Jam
- 150 ml Cream
Instructions
- Preheat the oven to 220°C
- Line a baking tray with non stick paper
- Sift the flour and baking powder into a mixing bowl, add a pinch of salt
- Soften the butter and add to the mixing bowl, rub in with your fingertips until the mixture resembles fine breadcrumbs
- Add the milk and quickly mix with a knife until the mixture forms a soft dough (the mixture should be soft and a little bit sticky). Add a little bit of extra milk if needed
- Sprinkle a little bit of flour onto the baking tray
- Add the dough to the baking tray and sprinkle a little bit more flour on top of the dough
- Pat the dough out to approximately 2cm thickness and with a floured knife cut it into 12 even-sized pieces. Separate the scones to allow 2cm space between them
- Brush the top of the scones with milk. Bake for 10 minutes or until golden brown. Place on a wire rack to cool, wrapped in a clean tea towel to keep them soft.Â
- Serve with butter, jam and whipped cream
