  • 3 c Flour
  • 6 tsp Baking Powder
  • Salt
  • 75 g Butter
  • 1 c Milk
  • 2 tbsp Butter
  • 2 tbsp Strawberry Jam
  • 150 ml Cream


  • Preheat the oven to 220°C
  • Line a baking tray with non stick paper
  • Sift the flour and baking powder into a mixing bowl, add a pinch of salt
  • Soften the butter and add to the mixing bowl, rub in with your fingertips until the mixture resembles fine breadcrumbs
  • Add the milk and quickly mix with a knife until the mixture forms a soft dough (the mixture should be soft and a little bit sticky). Add a little bit of extra milk if needed
  • Sprinkle a little bit of flour onto the baking tray
  • Add the dough to the baking tray and sprinkle a little bit more flour on top of the dough
  • Pat the dough out to approximately 2cm thickness and with a floured knife cut it into 12 even-sized pieces. Separate the scones to allow 2cm space between them
  • Brush the top of the scones with milk. Bake for 10 minutes or until golden brown. Place on a wire rack to cool, wrapped in a clean tea towel to keep them soft. 
  • Serve with butter, jam and whipped cream
