Creamy Pumpkin Pasta

  • 3 c Diced Pumpkin
  • 1 tbsp Butter
  • 250 g Streaky Bacon
  • 1 Onion
  • 2 Garlic Cloves
  • 300 g Penne Pasta
  • 2 tsp Chicken Stock Powder
  • 1 tbsp Flour
  • 1 tsp Garlic Powder
  • 1 tsp Dried Mixed Herbs
  • 150 ml Cream
  • Salt/Pepper
  • 200 g Green Beans


  • Bring a large saucepan of water to the boil (preparation to cook the penne pasta)
  • Peel and dice the pumpkin and cook in a large saucepan of water for 20 mins; until soft
  • Slice the onion and crush the garlic cloves
  • Add the butter to a large frying pan, add the bacon pieces, onion and garlic and brown for 6-8 mins Add the penne pasta to the saucepan of boiling water and cook for 8-10 mins, drain the water once cooked
  • Add the chicken stock powder, dried mixed herbs, flour and garlic powder to a bowl and mix with 1c of water
  • Drain the water from the cooked pumpkin and mash until smooth, add the liquid from step 6 to the pumpkin and continue to mash until smooth
  • Add the pumpkin to the frying pan and stir to mix with the bacon
  • Add the cream to the frying pan and stir to mix with the bacon and pumpkin.
  • Bring to the boil and simmer for 4-5 mins Slice and steam the green beans for 8-10 mins
  • Add the cooked penne pasta to the frying pan and stir to coat in the pumpkin mixture, the pasta will absorb the liquid
  • Serve
