Creamy Chicken, Mushroom & Spinach Gnocchi

Ingredients
- 500 g Chicken Breast
- 1 Onion
- 2 Garlic Cloves
- 1 tbsp Butter
- 5 White Button Mushrooms
- 2 tsp Chicken Stock Powder
- 1/2 tsp Garlic Powder
- 1 tsp Dried Parsley
- 150 ml Cream
- 500 g Gnocchi
- 2 c Baby Spinach Leaves
- Salt/Pepper
Instructions
- Dice the chicken breast, onion and mushrooms. Crush the garlic cloves.
- Bring a large saucepan of water to the boil, season the water with salt: preparation to cook the gnocchi
- Add the butter to a large frying pan. Brown the chicken, onion and garlic for 5-6 minutes
- Add the mushrooms to the frying pan and brown for 2-3 minutes
- Add the chicken stock powder, garlic powder and dried parsley to the frying pan. Stir to coat
- Add the cream to the frying pan, stir to coat. Season with salt and pepper. Simmer for 5-6 minutes. Add a little bit of extra cream if needed
- Add the gnocchi to the saucepan of boiling water, simmer until the gnocchi rises to the top of the water. Drain the gnocchi
- Add the gnocchi and baby spinach leaves to the frying pan, stir to combine
- Serve
