Ingredients
- 300 g Lean Beef Mince
- 100 g Onion
- 1 Garlic Clove
- Salt/Pepper
- 200 g Carrots
- 1 Tin of Tomatoes
- 1 tsp Beef Stock Powder
- 300 g Courgettes
Instructions
- Add the mince, diced onion and crushed garlic clove to a large frying pan. Season with salt and pepper, brown for 6-8 minutes
- Peel and grate the carrots, add to the frying pan
- Add the tinned tomatoes and beef stock powder to the frying pan with a small amount of water. Simmer uncovered for 12-15 minutes (add more water if needed)
- Cut the courgettes into 'zoodles', cook in a saucepan of boiling water for 6-8 minutes, drain once cooked
- Serve
