Ingredients

  • 300 g Lean Beef Mince
  • 100 g Onion
  • 1 Garlic Clove
  • Salt/Pepper
  • 200 g Carrots
  • 1 Tin of Tomatoes
  • 1 tsp Beef Stock Powder
  • 300 g Courgettes

Instructions

  • Add the mince, diced onion and crushed garlic clove to a large frying pan. Season with salt and pepper, brown for 6-8 minutes
  • Peel and grate the carrots, add to the frying pan
  • Add the tinned tomatoes and beef stock powder to the frying pan with a small amount of water. Simmer uncovered for 12-15 minutes (add more water if needed)
  • Cut the courgettes into 'zoodles', cook in a saucepan of boiling water for 6-8 minutes, drain once cooked
  • Serve
