Ingredients
- 300 g Beef Steak
- 1 tbsp Oil
- Salt/Pepper
- 2 Zucchini
- 4 White Button Mushrooms
Chimichurri
- 1/4 c Olive Oil
- 1 tbsp Red Wine Vinegar
- 1/4 c Fresh Parsley
- 2 Garlic Cloves
- 1/4 tsp Red Chilli Flakes
- 1/4 tsp Dried Oregano
- Salt/Pepper
Instructions
- Season the steaks with salt and pepper. Add a knob of butter to a large frying pan or BBQ. Cook the steaks to your liking; rare, medium, well-done. Allow to rest
- Slice the zucchini lengthways. Add a knob of butter to a frying pan, season the zucchini slices and whole mushrooms with salt and pepper. Brown for 8-10 minutes
- Serve the chimichurri sauce on top of the steak and the grilled vegetables on the side
Chimichurri Sauce
- Finely chop the parsley and garlic cloves, add to a bowl with the oil, red wine vinegar, chilli flakes, oregano, salt and pepper. Mix well to combine and allow to sit for 5-10 minutes
