Ingredients
- 4 Large Potatoes
- 250 g Streaky Bacon
- 1 c Cheese
- Salt/Pepper
- 125 g Sour Cream
- 1 tbsp Fresh Chives
- 1 Broccoli
- 2 Carrots
- 6 Brussell Sprouts
- 1 tbsp Oil
Instructions
- Cook the potatoes whole in a large saucepan of water until just soft. Remove from the water and allow to cool long enough to be able to handle them.
- Slice the potatoes but make sure you don't cut all the way through
- Slice the bacon and place inside the cuts in the potatoes
- Slice the cheese and place on top of the potatoes
- Place the potatoes on a non stick baking tray and cook in the oven for 15-20 mins at 180°C – cook any left over bacon in the oven at the same time
- Peel and slice the carrots, slice the broccoli and brussell sprouts
- Add the oil to a large frying pan and then stir fry the vegetables for 10-12 minutes, season with salt and pepper
- Serve the potatoes topped with a dollop of sour cream and chopped chives
